There's a trend on the restaurant scene towards so-called ‘dirty’ food. This doesn’t refer to ingredients that have passed their sell-by date or transgressed a major hygiene regulation. It’s much more appetising than that.
Instead, think of things that have been smoked, pulled, smacked with chilli, deep fried and are now swimming in sweet, sticky sauce. The good stuff, basically.
